These oat bars are a deeply nourishing snack or breakfast option made with wholesome ingredients that support your overall wellness. The mix of rolled oats, pumpkin seeds, sunflower seeds, and 100% peanut butter creates a balance of healthy fats, plant‑based protein, and important micronutrients like magnesium and zinc. Thanks to all the fiber from the oats, seeds, and banana, these bars are fantastic for your gut microbiome, digestion, and long‑lasting fullness.
The batter should be thick of consistency, and really make sure to pat down the batter in the baking pan. See the picture below.


The thick batter is exactly what makes the bars chewy, hearty, and satisfying once baked. I also add a bit of 80% dark chocolate, which brings a rich flavor and extra antioxidants while still keeping the recipe healthy.
add a bit of Sukrin Gold to the batter for some more sweetness, but you can leave it out completely as the bananas already sweeten them up quite a bit. But you can also replace it with maple syrup, honey, or any sweetener you prefer.
You can easily customize them too, swap peanut butter for almond or cashew butter, add extra seeds or nuts, or mix in different toppings. It’s a flexible, wholesome recipe that you can adapt to your own taste and pantry.
They bake in just 20 minutes and are perfect for meal prep: slice them into bars and enjoy them all week as a quick breakfast, post‑workout bite, or nourishing snack on the go. I hope you enjoy!

- Preheat your oven to 180°C and line a small baking dish with parchment paper or use a silicone baking pan.
- Mash the ripe bananas in a bowl until smooth.
- Add peanut butter, and vanilla extract. Mix until fully combined.
- Stir in rolled oats, pumpkin seeds, sunflower seeds, chopped dark chocolate. Also add in the sweetener of choice if preferred. I often add in 10 grams of sukrin gold, but other sweeteners work too.
- Combine everything until a thick, sticky mixture forms.
- Spread the mixture evenly into the lined baking dish and press down firmly.
- Bake for about 20 minutes at 180°C until golden and set.
- Let cool completely before slicing into bars.
