Raspberry Chia Crumble Bars

Many store-bought snacks are often packed with added sugars, refined ingredients, and ultra-processed foods that don’t provide much nourishment. That’s why I love making my own snacks using mostly simple, recognizable ingredients.

These crumble bars are made primarily with whole foods such as oats, banana, and raspberries, along with almond flour and peanut butter for extra nutrients and flavor. They’re naturally rich in fiber, healthy fats, and protein, making them satisfying and helping you maintain steady energy throughout the day. The raspberries add a fresh, slightly tart flavor and are also packed with antioxidants, making these bars both delicious and nourishing.

I’ve added whey protein for an extra protein boost. If you prefer to keep them more “whole-food” focused or plant-based, you can simply leave the whey out. Most of the healthy fats come from 100% peanut butter and chia seeds, which also provide additional fiber and omega-3 fatty acids.

I personally love the fresh, slightly tart flavor of raspberries, but if you prefer something a little sweeter, you can add a small amount of maple syrup to the raspberry-chia jam. This makes the filling slightly softer and sweeter. Maple syrup can be a more natural alternative to refined sugar and contains small amounts of minerals such as manganese and zinc, although it is still a form of sugar.

Healthy eating doesn’t have to mean avoiding fat. What matters is the overall quality of the nutrients you’re getting. These bars contain fiber, protein, and nourishing fats, making them satisfying and providing longer-lasting energy without the quick crash.

I often enjoy these for breakfast, but they’re also perfect as an afternoon snack. They provide enough energy to keep you going through the afternoon without leaving you hungry again soon.

Ingredients
  

Frambozen-chiajam
  • 250 grams raspberries fresh or frozen
  • 40 grams chia seeds
  • juice of 1/2 lemon
  • 1-2 tablespoon ahorn siroop optionally, for a sweeter taste
Havermout bodem & crumble topping
  • 1 big ripe banana ± 150 gram
  • 75 grams 100% peanutbutter
  • 175 grams rolled oats
  • 75 grams almond flour
  • 30 grams vanilla whey powder

Method
 

  1. Preheat the oven to 160°C (320°F) conventional heat and line a baking pan with parchment paper.
  2. Add the raspberries and lemon juice to a small saucepan. If you prefer a sweeter filling, you can also add the maple syrup. Heat over medium heat, stirring regularly, until the raspberries soften and break down.
  3. Remove the saucepan from the heat and immediately stir in the chia seeds. Let the mixture sit for a few minutes to thicken into a jam-like filling.
  4. Meanwhile, mash the ripe banana and peanut butter together in a large bowl with a fork until smooth.
  5. Add the dry ingredients: oats, almond flour, and vanilla whey protein powder. Mix everything well until you have a firm crumble dough.
  6. Spread approximately 2/3 of the oat mixture evenly over the bottom of the prepared baking pan and press it down firmly using the back of a spoon.
  7. Spread the raspberry-chia filling evenly over the base
  8. Crumble the remaining 1/3 of the oat mixture over the top to create the crumble layer.
  9. Bake the crumble bars for approximately 35 minutes, or until the top is nicely golden brown.
  10. Allow the bars to cool completely before slicing.
